They make our springtime beautiful. They decorate our homes to perfection. But did you know that flowers are also a wonderful addition to drinks and food?

It may seem a little out there, but flowers have been used in food and drinks as far back as Ancient Greece, Rome and Egypt. If we want to go back even further, the first mention of edible flowers being used was in 140 B.C. Impressive, right?

The most common way of enjoying flowers was to dry out the petals and brew them. Hibiscus, rose and jasmine have been popular infusions over the centuries, and are still going strong today!

But the uses for flowers go far beyond those drinks, as this recipe roundup shows. There’s always a reason to raise a glass and celebrate, so why not make drinks as elegant and flavourful as they can be?

But before you go into your garden to find yourself a delicious beverage, let’s look at which flowers are actually edible. (FYI, some are not).

Which flowers are edible?

Not all flowers are safe to eat. But those that are edible are vibrant with a unique flavour which will improve all kinds of dishes.

Pansy: These will provide your drink with a somewhat fresh yet powdery flavour.

Hibiscus: Expect a tart, pomegranate-like taste.

Honeysuckle: Honeysuckle is a beautiful flower which gives off a taste much like its name. Expect a delicious nectar.

Lavender: Lavender has a pungent floral aroma, with subtle notes of mint and earthiness.

Nasturtium: These have a peppery, woodsy taste.

Lilac: They taste a bit bitter, but with powdery, floral hints.
